2016 Old Soul Pinot Noir
The unique combination of the sun’s heat generated during the day and the cool breezes off the delta at night allows our vines to produce fruit with generous ripeness while preserving the acidity necessary to produce wines of distinction. Fermentation is achieved at a variety of temperatures to retain aromatics on some lots and extract color and body on others. At dryness, the wine is put through malo-lactic fermentation to soften the acids and broaden the mid-palate. After malo-lactic, the wines are divided into lots and selected, based on their profile, to age in oak for various lengths of time. Finally, the best lots are selectively blended to produce a wine true to it’s Lodi terroir.
